I tried their famous "Mac & Yease" made with cashew cheese, and it was absolutely delicious.
It was heartening to see that even non-vegetarian eaters were enjoying their meals at Plum Bistro. As I traveled further north towards Bellingham, I found that the vegetarian and vegan options were not as abundant as in Seattle. However, there were still some great options available. At The Bagelry, a popular bagel shop in Bellingham, I found a variety of vegetarian bagel sandwiches and even a vegan cream cheese option.
